Is it cold and bleak outside? Then treat yourself to this recipe for creamy cheese soup. A silky soup with the taste of your favorite cheese and spicy kick that is guaranteed to make you warm again.

This cheese soup is ideal as a plate of comfort food on a cold autumn or winter day. But you can also serve it as a hearty starter at a festive dinner or as a luxurious lunch. Delicious with a cheese stick!

Ingredients (8 persons)

1 liter chicken stock
400 ml cream
900 gr. grated cheese
4 cloves of garlic, finely chopped
1 red pepper
1/5 leek, cut into rings
1 white onion, coarsely chopped
8 Rosevall potatoes (or other tasty potatoes)
1⁄2 chili pepper, finely chopped

Preparation

  1. Cut the onion, pepper and potatoes into coarse pieces, the leek into rings and the garlic and chili pepper finely. Heat a dash of olive oil and turn all the vegetables on for a few minutes.
  2. Add the chicken broth and let it boil for 20 minutes with the lid on the pan.
  3. Add the cream and cook for another 5 minutes.
  4. Add the cheese to the soup in the pan and cook for another 5 minutes. In the meantime, keep stirring well.
  5. Make the soup smooth with the hand blender.
  6. Pour the soup through a fine sieve for a velvety texture and serve immediately.
