Ingredients (8 persons)
1 liter chicken stock
400 ml
900 g grated cheese
4 cloves garlic, finely chopped
1 red bell pepper
1/5 leek, cut into rings
1 white onion, roughly chopped
8 Rosevall potatoes (or other tasty potatoes)
1/2 Spanish pepper, finely chopped

Preparation
- Roughly chop the onion, bell pepper, and potatoes, slice the leek into rings, and finely chop the garlic and chili pepper. Heat a drizzle of olive oil and sauté all the vegetables for a few minutes.
- Add the chicken stock and simmer for 20 minutes with the lid on the pan.
- Add the cream and simmer for another 5 minutes.
- Add the cheese to the soup in the pan and cook for another 5 minutes, stirring constantly.
- Blend the soup until smooth with a hand blender.
- Strain the soup through a fine sieve for a velvety smooth texture and serve immediately.
